Steak Fajitas

Steak fajitas are a quick, flavorful meal that’s perfect for busy weeknights or relaxed weekend dinners. Tender strips of beef are cooked with colorful bell peppers, onions, garlic, and warm spices, then served in soft flour tortillas with your favorite toppings.

Ingredients

  • 1 pound flank steak, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tablespoons vegetable oil, divided
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Flour tortillas, for serving

Instructions

  1. Cook the steak: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the sliced steak and cook for about 3 to 4 minutes, stirring occasionally, until browned and cooked to your preferred doneness. Remove the steak from the skillet and set aside.
  2. Cook the vegetables: Add the remaining tablespoon of vegetable oil to the same skillet. Add the sliced red bell pepper, green bell pepper, and onion. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables are tender and lightly charred.
  3. Add the seasonings: Add the minced garlic, cumin, chili powder, salt, and black pepper. Stir well and cook for another 1 to 2 minutes, until the garlic and spices become fragrant.
  4. Combine: Return the cooked steak to the skillet. Toss everything together and cook for another 1 to 2 minutes, just until the steak is heated through.
  5. Warm the tortillas: Warm the flour tortillas in a dry skillet for about 20 to 30 seconds per side, or heat them briefly in the microwave.
  6. Serve: Spoon the steak and vegetable mixture into the warm tortillas. Add shredded cheese, guacamole, sour cream, salsa, or any other toppings you enjoy.
